The team from Destination Vancouver was out in full force in Sydney last night for the Vancouver World Chef Exchange, featuring three world-renowned chefs: Chef Mark Best, Chef Paul Farag, and Chef Charlie Kunsang.

Co-hosted by Destination Vancouver and Air Canada, the event took place at Aalia restaurant in Sydney, bringing together key travel trade, media, and hotel partners to celebrate partnerships in the Australian market. The evening highlighted Dine Vancouver, Canada’s largest food and drink festival, which runs from 22 January to 9 February and features over 400 participating restaurants.

Attendees included representatives from Pan Pacific, Marriott Pinnacle Downtown, and Sheraton Vancouver Wall Centre, alongside partners from major Vancouver attractions such as Grouse Mountain, Vancouver Foodie Tours, and Discovery Canada Tours.

Guests were treated to a special menu created through a unique collaboration between three celebrated chefs—Mark Best, one of Australia’s most innovative culinary minds; Charlie Kunsang from l’Abattoir restaurant in Vancouver; and Paul Farag from Aalia. The chefs shared insights into their culinary experiences and prepared a meal that showcased the quality ingredients and international collaboration between both cities.

The menu featured signature dishes from Aalia and l’Abattoir, including steak tartare, honeyed Yamba prawns, Murray cod masgouf, and grilled hanger steak.

Megan Nelson from Destination Vancouver encapsulated the city’s essence, describing the brand as “the pursuit of wellbeing. Our promise is a journey of invigoration, brought to life in Vancouver through immersive outdoor experiences, urban vibrancy, converging cultures, and fresh perspectives… Vancouver’s personality is effortless, embracing, energising, and refreshing.”

This year, Vancouver will welcome 301 cruise ships and 1.2 million cruise passengers, offering plenty of activities for visitors pre- or post-cruise.
